Guests attending the VIP studded cocktail party included dignitaries such as Governor of NSW, Prof. Marie Bashir; NSW Premier Nathan Rees and Sydney Lord Mayor Clover Moore.

Forte’s head chef, Rob Carson’s brief was to design a menu around the Festival’s new unifying emblem, a yellow balloon – a symbol of hope, optimism, renewal and ideas. Sydney Festival is currently Sydney’s largest annual cultural celebration and festival program.

Some of the canapés created to enhance the theme were black sesame tartlette with woodside goats curd & pickled golden beets and golden corzetti with yellow piperade and baby basil. This was followed by sweet tangy lemon, mango and orange macaroons along with palate cleansing mini gelato cones.

“It is exciting to be aligned with such a progressive event,” said Ross Mitchell, Forte’s director of operations. “The launch was an opportunity to showcase the Festival program along with Forte’s culinary expertise.”

Sydney Festival’s catering manager, Fernando Motti called Forte sensational, saying they “delivered an amazing product and our guests were wowed by the food and service.”
