New South Wales’ Central Coast is set to welcome a brand new dining destination, when The Bon Pavilion opens its doors mid-April.
The latest project from Australian entrepreneur John “Singo” Singleton, The Bon Pavilion will comprise a restaurant, cafe and bar housed inside the 14-storey Bonython Tower in Gosford.
A Central Coast resident himself, Singleton had a vision to create “a meeting place in the heart of Gosford for everyone to enjoy”.
To help realise this, Singleton reunited with the team that successfully delivered his other projects Bells at Killcare and Pretty Beach House, Brian and Karina Barry.
“We have followed Sean’s illustrious career for many years,” said Karina Barry.
“His food philosophy focuses heavily on ethically sourced produce and premium suppliers, which Brian and I feel very strongly about.”
Heading up the kitchen is executive chef Sean Connolly, who runs five establishments in Australia and New Zealand. Connolly’s food philosophy is “all about the produce driving the flavours”.
“I find as I get older the simpler my food gets,” he said. “My food looks simple, but there’s a lot of thought process and complexity to the dishes. Good food should speak for itself.”
The Bon Pavilion will also be available for corporate events, with a number of event spaces on offer.
The venue can cater to sit-down dinners of up to 120 people and cocktail events for up to 230 guests. A corporate meeting room is also on offer for groups of 20 and a private dining room for 8 people.
The Bon Pavilion will encompass the family friendly restaurant Bonfire, Bon Bon Espresso, Bon Vin Private Dining, Bon Public Bar and Bon Bon Bar.
