The Byron at Byron has announced two key appointments to its food and beverage team.
The resort has welcomed Minh Le to The Restaurant as executive chef and Damian Kalusiewicz as food and beverage manager.
Le brings a wealth of culinary experience to the position, including his most recent role at Spicers Peak Lodge.
Le will take The Restaurant in a new direction, drawing on his Vietnamese heritage and focusing on local produce.
Kalusiewicz, who hails from The Langham in Melbourne and Chicago, will reimagine The Restaurant’s wine list to feature light, crisp whites and savoury, aromatic reds.
The cocktail list is also getting a revamp with a focus on local exotic fruits and indigenous herbs and spices, whilst showcasing distilleries from the Northern Rivers region.
The food and beverage offering will also have a renewed focus on sustainability, with initiatives already in place to phase out single-use plastic from the resort.
Conferencing delegates will also get a taste of the new culinary direction, with updated packages on offer to include new dishes and drinks.
