Inspired by San Sebastian and Barcelona’s pintxos and tapas bars, the 50-seat venue launched on 19 November 2024 – with Spice in attendance – and promises Sydney diners authentic Basque-style bites and generous Spanish hospitality.
For business and social cocktail events, Percy can host up to 80 guests.
Its tapas menu showcases pintxos and small plates, including skewers of pickled guindilla peppers, salty manchego and olives; Padron peppers with labneh; savoury pan con tomate; spicy nduja butter on sourdough; artichoke fritters with romesco; croquetas del dia; and fried squid bocadillos.
Heartier menu options include flank steak with mojo verde, and spatchcock picante with sobrasada jus.
The venue also heroes preserved gourmet seafood such as sardines, anchovies and salmon, evoking the spirit of wine bars in Basque Country.
“Spain has some of the best produce in the world so it was only right we sourced the best ingredients we could find for Percy’s menu,” says executive chef Eli Lozada, whose experience includes Rockpool Dining Group, Epicurean and Cirq.
“Every dish has been designed to give authentic Spanish flair. It’s all about fresh, traditional flavours that have been chosen to go perfectly with Percy’s list of Spanish wines.”
For Percy chef Rosy Scatigna, the new venue is a representation of her experience in the Spanish city of San Sebastian.
“I spent days wandering pintxos bars, tasting fresh flavours and feeling that electric buzz of people enjoying their dining experience, sharing good food and wine. We’re bringing that vibe here,” she says.
“It’s food that is made to be enjoyed in good company, where every bite has a story.”
Percy also features a rotating list of organic and minimal-intervention wines, with particular emphasis on native Spanish varietals.
Designed for social gatherings and intimate dining, Percy includes high bar seating and an atrium dining area with natural light.
Communal tables encourage sharing and conversation, while a private dining room that seats 14 guests – and can be separated by curtain – offers a more intimate setting.
