Kick starting the spring racing carnival, the Bellevue Hotel in Sydney’s Paddington has launch of the NV Mumm Champagne Spring Carnival Bar last week (Wednesday October 17.)


Located within the Bellevue Hotel in Sydney, the  NV Mumm Champagne Spring Carnival Bar is available for events.

Located upstairs at the Bellevue, the beautifully themed bar – launching with prestigious NV Mumm champagne – will host key spring racing events including Caulfield Cup, Cox Plate and Derby Day, as well as a special men’s dinner, a sumptuous Damien Pignolet dinner and the ultimate in Melbourne Cup day celebrations.

Launched with ambassador Laura Csortan – and Alex Dimitriades DJing – the NV Mumm Champagne Spring Carnival Bar will run through until Melbourne Cup day on Tuesday November 6, and is available for functions and group bookings throughout the Spring Racing Carnival season.

The Bellevue’s Executive Chef Damien Pignolet, has designed delectable menus that have been beautifully matched to the fresh and full-bodied NV Mumm champagne. Damien Pignolet says, “Mumm is a superb champagne, it was a delight to match beautiful spring produce to. I’m really excited about what we’re doing in the NV Mumm Spring Carnival Bar and the menu’s we’ve developed.”

“Being so close to Randwick, the heart of Sydney racing, the Bellevue has always been a hugely popular post race destination. Our new NV Mumm Champagne Spring Carnival Bar will only build on that, and make us a first call spring racing destination,” said Bellevue Hotel co-owner and CEO of the Riversdale Group Patrick Coughlan.

“And we’re serving a much better champagne than on the track at Randwick,” adds a cheeky Coughlan. “It’s exciting to partner with Mumm and do something different.”
