Double Bay in Sydney welcomes a new wine bar and dining room.

Vine Double Bay, which opened last week, is owned by Gavin Douchkov and Manny Karson and managed by Sydney bar veteran Mikee Collins.

Collins said, “Double Bay already has a number of great bars, cafes and restaurants and we are confident that Vine Double Bay will be a welcome addition to the area. The venue will offer approachable food and wine along with great service and a relaxed atmosphere. The venue is modern, open and filled with natural light – making it perfect for afternoon drinks, dinner with friends or a long lunch.”

The kitchen team is led by chef Drew Bolton who has worked at French Laundry in California’s Napa Valley, Darley’s at Lillianfels in the Blue Mountains and Peter Gilmore’s Quay.

The menu will focus on share plates with dishes such as sashimi of Tasmanian trumpeter, meyer lemon and shaved fennel, smoked pork jowl and crackling with parsnip, tangelo and cumquat, Rankin Cod with Port Lincoln banana prawn, black garlic, asparagus and galangal-scented mantis shrimp bouillon, Dutton Park whole-duck glazed with lavender and star anise, rhubarb and celery heart and braised wild hare pithivier with truffled potato puree and buttered kale.

The wine list will feature 50 wines from lesser-known but standout boutique wineries as well as organic and biodynamic styles. Alongside the considered wine list will be a selection of international craft beers and cocktails inspired by vine-grown fruit and vegetables.

The venue has capacity for 235 people sit-down. Vine Double Bay is open for dinner Tuesday – Saturday and lunch Thursday – Sunday.
