Bar Odessa, a new underground cocktail lounge, has opened within popular Sydney dining establishment 1821.

The secretive bunker bar features luxurious gold and velvet furnishings and a cocktail and wine menu which matches the quality and individuality of the food upstairs at the Greek restaurant.

The theme of the fusion bar was inspired by political and cultural relationships formed between Greek diplomats and generals who were exiled after the Ottoman occupation in Greece, explained executive chef David Tsirekas.

“The town of Odessa belonged to the Ottomans, but thanks to the help of friendly Russians and the assistance of Catherine The Great, the famous city was liberated,” he said.

Bar Odessa will also be offering exclusive bottle service under lock-and-key.

“Our regular patrons can purchase a bottle of Beluga and we will keep it in a cabinet on display for every visit. Each bottle will have their names on a plaque next to it making it a personal experience. The Beluga bottles are truly exquisite to look at – they look fantastic lined up in the cabinet,” added David.

Bar Odessa is located on 122 Pitt Street, Sydney (Entrance also via lane directly behind 1821).
