Trippas White Group’s Centennial Parklands Dining team hosted a lunch in the Wine Room last Friday 4 March, 2016.

85 corporate meeting planners gathered together in the bright, airy venue to enjoy casual canapés including beetroot crisps with honey and lavender goat’s cheese and yakitori chicken skewers, as well as free-flowing Champagne and wine, and a grazing buffet for lunch.

Head chef Arkin Barretto prepared ocean trout baked in hot river stones, pickled baby pearl onion petals, new potatoes and watercress, roasted capsicum stuffed with quinoa, pomodoro sauce, goat’s cheese and roast pork belly, chicharrón, water chestnut, black pearl barley, caramelised apple sauce.

The dessert station featured chocolate mousse, honeycomb and sour cream chantilly and soft berry pavlova with popping candy.

Spice Editor Emma Gardiner spoke about event trends for 2016 (the full presentation is available here) while guest enjoyed the decorative ambience created by Tracy Wood and her team at Funktionality and the music supplied by Evan Powis Entertainment.
