Fairmont Resort Blue Mountains overhauls dining options

Fairmont Resort Blue Mountains (member of the MGallery Collection) has launched a new dining venue called The Terrace, refurbished Jamison's Restaurant and introduced a new menu in Embers Dining.

Fairmont Resort Blue Mountains (member of the MGallery Collection) has launched a new dining venue called The Terrace, refurbished Jamison’s Restaurant and introduced a new menu in Embers Dining.

The Terrace was an outdoor terrace that has now been enclosed in glass to provide an indoor/outdoor experience with views over the Jamison Valley.

The new menu features items such as Jannei goat’s curd custard with asparagus, pickled mushrooms and date purée, as well as Lithgow Valley Wagyu beef tenderloin with bone marrow, nameko mushroom and béarnaise. A children’s menu is also available.

Jamison’s Restaurant has also undergone a major refurbishment and now has modern interiors, interactive chef’s cooking station and fresh buffet stations for breakfast. A weekly Saturday seafood dinner buffet is now available.

Embers Dining has revamped its tapas menu to include items such as scallop ceviche, Three Sister sliders and smoked salmon terrine.
